Matt LOVES going to 'On the Border' when we get the chance. I like it just fine, but I have never found anything there that I truly thought was great. Until just the other day. I ordered this stuffed avocado with an enchilada. YUMMY!!! The avocado was stuffed with chicken, chilies and cheese. Then it was tempura battered and fried! I think I died and went to heaven. If you like avocados I highly recommend this dish. If you have an On the Border near you, go and get this for dinner tonight!
